Famous Flourless Lava Cake

For a while now, I’ve been baking flourless lava cake. Usually, I follow the Allrecipes recipe on the internet which specifies that you should use:

– 8 ounces of 70% bittersweet chocolate

– 12 tablespoons of unsalted butter

– 4 large eggs

– ½ cup of granulated sugar

– ½ teaspoon salt

The recipe specifies that the chocolate should be 70% and finely chopped; however, when mixing the ingredients, I usually tend to buy 60% Ghirardelli baking chocolate and break it into pieces before melting it in a pot with the butter.

First, you will preheat the oven to 375 degrees Fahrenheit. Then, you will melt the chocolate and butter in a bowl over simmering water (or directly in a pot or microwave). After this step, in a different bowl you will whisk the eggs, sugar, and salt on medium speed for about five minutes, an essential step as this will be the only rising agent the cakes will have. You will add the chocolate mixture to the egg mixture, mix, and add to the baking tins. Finally, bake for about 10 minutes or until the edges look baked but the center is not.

This recipe usually allows me to make 4 to 6 small cakes, which I bake in porcelain or glass baking tins. It’s a great dessert to make with family or friends and allows for a less expensive molten lava cake as well. Just add some ice cream, and you’re set!
